Easy Apple Cinnamon Waffles

Ingredients

  • 1 cup Chia Oat Pancake Mix
  • 1 cup milk of choice
  • 2 tablespoons unsweetened apple sauce (an apple sauce pouch works great)

Instructions

  • Combine dry pancake mix, milk and apple sauce in a bowl.
  • Spoon mixture onto lightly-oiled waffle iron and cook as directed.
  • Mom-Hack: Have your child finish the apple sauce pouch as their waffle cooks to avoid "hanger".

Pumpkin Spice Pancakes

Ingredients

  • 1 cup Chia Oat Pancake Mix
  • 1 cup milk of choice
  • 2 tablespoons pumpkin puree
  • Optional: 1/2 teaspoon pumpkin pie Spice

Instructions

  • Combine all ingredients in a bowl and mix thoroughly.
  • Cook pancakes on pre-heated griddle or skillet, or cook in a lightly-oiled waffle iron for pumpkin spice waffles.

Blueberry Pancake Muffin Bites

Ingredients

  • 1 cup Chia Oat Pancake Mix
  • 1 cup milk of choice
  • 1 cup sliced blueberries
  • Optional: 1/4 cup maple syrup

Instructions

  • Spray or line mini muffin pan
  • Combine dry pancake mix, milk and optional maple syrup in a bowl.
  • Spoon mixture into a mini-muffin pan, filling each to 2/3-3/4 full.
  • Top each muffin with sliced blueberries.
  • Bake for 14-15 minutes at 375 degrees.
