Tips: Here are some tips for using your fritter mix

  • All our recipes can be baked in the oven, fried in a frying pan, or (our personal favourite!) cooked in a waffle iron.
  • Any ingredients you put into the fritter should already be an appropriate texture/size for your little one. For example, if they are eating only soft foods, only use steamed or mashed veggies in your fritters.
  • These are the perfect thing to re-purpose leftovers! Leftover mashed potatoes, steamed veggies, etc can all be used to make delicious fritters.
  • Add water sparingly! Your mixture should be thick and just wet enough so that it sticks together, if it’s too dry, add only a tsp of water at a time until it is the appropriate texture.
  • Feel free to add in more flavour! Shredded cheese, extra spices and/or salt for those over 1 year all work well.

Broccoli Cheese Tots

Ingredients

1/2 cup steamed or finely chopped broccoli (if using raw broccoli you will need to add in more water to your mixture)
1/2 cup shredded cheese (dairy or plant-based)
1/2 cup chickpea fritter mix

Instructions

  • Combine all ingredients in a bowl, adding 1 tsp of water at a time to your mixture until it forms a thick batter.
  • With wet hands, form into “tots” and place on a baking sheet lined with parchment paper.
  • Bake for 18 minutes at 400 degrees F.
  • Serve with favourite dip! Plain yogurt, tzatziki dip or even ketchup work well.

Potato Carrot Onion Fritters

Ingredients

1 finely grated medium-size potato (peeled), or 1 cup left-over mashed potatoes
1/2 a carrot, finely grated
1/4 cup grated or finely chopped onion
1/2 cup chickpea fritter mix

Instructions

  • Combine all ingredients in a bowl
    With wet hands, form into small patties. If the mixturre is too dry add 1/2 tablespoon of water.
  • Fry in lightly oiled pan both sides until golden brown or cook in a waffle iron.
  • Serve with favourite dip, such as plain yogurt or sour cream.

Easy-Peasy Fritters

Ingredients

1 cup pea puree, or 1 cup frozen peas
1/2 cup chickpea fritter mix

Instructions

  • If using frozen peas, steam or boil 2-3 minutes until cooked, then mash thoroughly with a fork.
  • Combine mashed peas and fritter mix in a bowl, added 1-2 tablespoons of water until the mixture forms a thick batter.
  • Spoon onto a lightly oiled pan and cook for 2-3 minutes per side until golden brown.
  • Serve with favourite dip, such as plain yogurt or tzatziki dip.

*Whole peas in photo to show ingredients only, do not serve whole raw peas to young children.

Toddler Chickpea Cheese Crackers

Ingredients

1 cup cheddar cheese
1/2 cup Riley’s Kitchen chickpea fritter mix
2 tbsp butter
1.5 tbsp cold water
Pinch of salt

Instructions

  • Preheat oven to 350°F.
  • In a food processor, combine cheese, chickpea fritter mix, and butter. Pulse until crumbly. Slowly add water until dough forms.
  • Knead by hand for 30 seconds, shape into a disc, cover with plastic wrap, and chill for 30 minutes.
  • Roll out dough, cut into shapes (yo can use cookie cutters like these animal cracker ones!), sprinkle with salt, and bake for 8-10 minutes (do not over-bake).

    Tip: Double the recipe because you and your kids will want to eat the whole pan! 😋
