Baby and Toddler Fritter Recipes

Our Family's Favourite Easy Fritter Recipes PLUS Exciting News!

Today, we're thrilled to share not only three of our family's favourite fritter recipes but also some exciting news! But first, let's dive into these mouthwatering recipes that are prefect not only for baby-led weaning but are sure to become staples in your kitchen for years to come!

1. Broccoli Cheese Fritters

Ingredients:

  • 1 cup Riley's Kitchen Chickpea Fritter Mix
  • 2/3 cup water
  • 1/2 cup chopped broccoli florets. You can use raw broccoli florets finely chopped with kitchen scissors for toddlers. For babies 6-12 months we recommend using finely chopped steamed broccoli to ensure a safe texture. 
  • 1/2 cup shredded cheese (use dairy-free cheese or do not include if you are dairy-free)
  • Olive oil for frying

Instructions:

  1. In a large bowl, combine the Chickpea Fritter Mix, water, chopped broccoli, shredded cheese. 
  2. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop spoonfuls of the mixture into the skillet, flattening them slightly with the back of the spoon.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy.
  6. Remove from the skillet and allow to cool before serving. 
  7. Tip: these make great savoury waffles too! Just cook in a waffle iron. 

2. Mini Chickpea Pancake Pizzas

Ingredients:

  • 1 cup Riley's Kitchen Chickpea Fritter Mix
  • 1 cup water
  • Pizza toppings of your choice (e.g., marinara sauce, cheese, veggies)

Instructions:

  1. In a bowl, whisk together the Chickpea Fritter Mix and water until smooth. Let sit 1-2 minutes to thicken. 
  2. Heat a non-stick skillet over medium heat and pour a small amount of the batter onto the skillet to form mini pancakes.
  3. Cook for 2-3 minutes on each side or until lightly golden.
  4. Remove from the skillet and top with your favourite pizza toppings.
  5. Baby-led weaning tip! To make this less messy for babies, try adding some of the toppings right into the batter. For example, a small spoonful of marinara sauce, 1/4 cup shredded cheese and 1/4 cup finely chopped spinach (*ensure any ingredient you put into the pizza is the appropriate size and texture for your baby).
  6. Place the pizzas under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
  7.  Enjoy these adorable and tasty mini pizzas!

3. Zucchini Fritters with Homemade Tzatziki Dip

Ingredients:

  • 1 cup Riley's Kitchen Chickpea Fritter Mix
  • 2/3 water
  • 1 cup grated zucchini, excess moisture squeezed out
  • 1/4 teaspoon dried dill
  • Olive oil for frying

For the Tzatziki Dip:

  • 1/2 cup plain Greek or dairy-free yogurt of choice
  • 1/2 cup grated cucumber, excess moisture squeezed out
  • 1 tsp minced garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the Chickpea Fritter Mix, water and grated zucchini.
  2. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop spoonfuls of the mixture into the skillet, flattening them slightly with the back of the spoon.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
  7. To make the Tzatziki Dip, combine Greek yogurt, grated cucumber, garlic, lemon juice, chopped fresh dill, salt, and pepper in a bowl.
  8. Mix until well combined.
  9. Serve the zucchini fritters warm with the homemade tzatziki dip on the side.
